  • 1 can (14.5 oz) Tomatoes(diced, undrained)
  • 1 medium Bell pepper(any color, finely chopped)
  • 2 tbsp Vegetable oil or coconut oil
  • 4 cups Water or vegetable broth
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 1 leaf Bay leaf
  • 1 small Optional: Chili pepper(minced, for heat)

    In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and bell pepper and sauté until softened, about 5-7 minutes.
