Zimbabwean Sweet Potato and Peanut Stew (Muriwo Unedovi ne Mbatata)

- 2 large Sweet potatoes(peeled and cubed)
- 2 tbsp Vegetable oil
- 1 medium Onion(chopped)
- 400 g Tomatoes(chopped)
- 100 g Peanut butter(smooth or crunchy)
- 500 ml Water or vegetable broth
- to taste Salt
- to taste Black pepper(freshly ground)
- 200 g Spinach or kale(chopped)
- 2 cloves Garlic(minced)

Heat vegetable oil in a pot over medium heat. Add chopped onion and sauté until softened.
