  • 2 tubers Cassava root(peeled and cut into large chunks)
  • 4 large Sweet potatoes(peeled and cut into large chunks)
  • 2 medium Onions(finely chopped)
  • 6 cloves Garlic(peeled and sliced)
  • 485 g Bell peppers (mixed colors)(deseeded and sliced)
  • 340 g Portobello mushrooms(rinsed and sliced)
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Tomato paste
  • 1 whole Scotch bonnet pepper or habanero(optional, for heat)
  • 1 heaped tsp Fennel seeds
  • 1 tsp Ground black pepper
  • 1.5 tsp Coarse sea salt(or to taste)
  • 2 sprigs Fresh thyme sprigs(for garnish)
  • 1 optional Seasoning cube
