  • 1 tsp Bird's eye chilies(minced (optional, for heat))
  • 1 tsp Salt(or to taste)
  • 2 tbsp Vegetable oil
  • 1 medium Potatoes(peeled and cut into small cubes)
  • 2 large Eggs(beaten for omelet)
  • 0.25 cup Fresh cilantro(chopped, for garnish)
  • 0.25 cup Green onions(chopped, for garnish)
  • Jaew kapi (fermented shrimp paste dip)(for serving (optional))
