  • 10-15 Dried chillies(seeds removed, soaked in hot water until softened)
  • 1 large Onion(quartered)
  • 4 cloves Garlic(peeled)
  • 1 inch Ginger(peeled)
  • 1 tsp Turmeric powder
  • 1 tsp Belacan (Shrimp paste)
  • 1/2 cup Water(for blending spice paste)
  • 5 tbsp Tamarind paste
  • 2 cups Water(for tamarind juice)
  • 1 stalk Lemongrass(bruised)
  • 3-4 stalks Okra(trimmed)
  • 1-2 Tomatoes(cut into wedges)
  • a few sprigs Vietnamese mint leaves (Daun Kesum) or Curry leaves
  • 3-4 tbsp Cooking oil
  • to taste Salt
