  • 2 Pasilla chiles(stemmed and seeded)
  • 90 g Chipotle meco chiles(optional, for added smokiness and heat, stemmed and seeded)
  • 60 ml Almonds(raw, unskinned)
  • 60 ml Peanuts(raw, shelled)
  • 60 ml Pumpkin seeds (pepitas)(raw)
  • 2 pieces Sesame seeds(divided, some for sauce, some for garnish)
  • 1 L Raisins(low sodium, warm)
  • 2 kg Plantain(ripe, peeled and sliced)
  • 120 ml Corn tortilla(torn into pieces)
  • 1 medium White bread(stale, torn into pieces)
  • 4 cloves White onion(roughly chopped)
  • 2 medium Garlic cloves(peeled)
  • 1 piece Tomatoes(roughly chopped, preferably fire-roasted)
  • 3 whole Tomatillos(roughly chopped (optional, for tanginess))
  • 1 teaspoon Cinnamon stick(or 1/2 tsp ground cinnamon)
  • 0.5 teaspoon Whole cloves
  • 1 teaspoon Black peppercorns
  • Anise seeds(to taste)
