🧂 Zutaten

  • 6 large Bell peppers(any color, tops cut off and seeds removed)
  • 500 g Ground lamb(or ground beef)
  • 1 cup Short-grain rice(rinsed and soaked for 1 hour)
  • 1 medium Onion(finely chopped)
  • 5 stalks Green onions(finely chopped)
  • 2 large Tomatoes(diced)
  • 6 oz Tomato paste(can)
  • 1 cup Fresh parsley(chopped)
  • 1 cup Fresh cilantro(chopped)
  • 2 tsp Hararat spice blend
  • 1 tsp Red chili powder
  • 1 tsp Turmeric
  • 1 tsp Dried mint
  • 2 tsp Salt(or to taste)
  • 1 tsp Black pepper(freshly ground)
  • 2 tbsp Olive oil
  • 4 cups Water or beef broth

💡 Profitipps

  • For a spicier kick, you can add a finely chopped Anaheim or other chili pepper to the filling mixture.
  • If the sauce seems too thick during cooking, add a little more water or broth. If it's too thin, you can simmer it uncovered for the last 15-20 minutes to reduce.
  • This dish can be made ahead of time and reheated. You can also freeze the stuffed peppers before baking for a later meal.
