  • 1/4 cup All-purpose flour
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 large Yellow onions(chopped)
  • 4 cloves Garlic(minced)
  • 3 medium Carrots(peeled and cut into 1-inch chunks)
  • 2 medium Parsnips(peeled and cut into 1-inch chunks)
  • 500 g Potatoes(Yukon Gold, cut into 1.5-inch chunks)
  • 6 cups Beef broth
  • 1 cup Red wine(such as Merlot or Cabernet Sauvignon)
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 Bay leaf
  • 1/2 cup Saskatoon berries(fresh or frozen)
  • 1/4 cup Fresh parsley(chopped, for garnish)
