  • 2 medium Potatoes(peeled and cut into 1-inch cubes)

  • 2 stalks Lemongrass stalks(bruised and roughly chopped)
  • 6 cloves Garlic cloves(minced)
  • 1 large Onion(chopped)
  • 1 inch piece Ginger(peeled and grated)
  • 2 small Red chilies(seeded and sliced (optional, for heat))
  • 200 ml Coconut milk
  • 500 ml Water or beef broth
  • to taste Salt
  • 1 tsp Sugar(or to taste)
  • 2 tbsp Vegetable oil
