  • 150 ml Dry red wine(optional, but recommended for depth of flavor)
  • 500 ml Beef or lamb broth(or water)
  • 1 Cinnamon stick
  • 1 Bay leaf
  • 80 ml Olive oil
  • to taste Salt
  • to taste Freshly ground black pepper
  • 100 g Kefalotyri or Graviera cheese
  • for garnish Fresh parsley
