  • 2 tbsp Vegetable oil
  • 4 cloves Garlic(minced)
  • 1 inch Ginger(grated)
  • 1 medium Onion(chopped)
  • 2 medium Carrots(julienned)
  • 1 medium Bell pepper(any color, julienned)
  • 1 cup Cabbage(shredded)
  • 1 cup Broccoli florets
  • 1 cup Mushrooms(sliced)
  • 6 cups Vegetable broth
  • 2 tbsp Soy sauce
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Chili flakes(or to taste)

  • 200 g Noodles(thick wheat noodles or ramen noodles)
  • 2 stalks Green onions(chopped, for garnish)
  • 2 tbsp Cilantro(chopped, for garnish)
