- 2.5 L Water(about 10 cups)
- 3 medium Carrots(peeled and diced)
- 3 medium Potatoes(peeled and cubed)
- 1 large Onion(chopped)
- 2 Celery stalks(chopped)
- 3 Garlic cloves(minced)
- 2 tbsp Vegetable oil or olive oil
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 0.25 cup Parsley(fresh, chopped, for garnish)
- 1 Bay leaf

Place the chicken in a large pot with water. Add salt and a bay leaf. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the chicken is cooked through. Skim off any foam that rises to the surface.

Remove the chicken from the pot and set aside to cool slightly. Strain the broth and discard the bay leaf. Once cooled, shred or dice the chicken meat.
