Kuwaiti Lentil and Vegetable Stew

A hearty and comforting lentil and vegetable stew, infused with aromatic Middle Eastern spices. This dish is a staple in Kuwaiti homes, perfect for a nourishing meal.

- 1.5 cups Red lentils(rinsed)
- 2 tbsp Olive oil
- 1 large Onion, finely chopped
- 4 cloves Garlic, minced
- 1 medium Carrot, diced
- 1 medium Potato, diced
- 2 medium Tomatoes, chopped
- 2 tsp Baharat (Middle Eastern spice blend)
- 1 tsp Ground cumin
- 1/2 tsp Turmeric powder
- 2 Dried black limes (loomi)(pierced)
- 8 cups Water or vegetable broth
- Salt(to taste)
- Black pepper(to taste)
- Lemon wedges(for serving)
- Fresh coriander, chopped(for garnish)

Heat olive oil in a large pot or Dutch oven over medium heat. Add the finely chopped onion and sautรฉ until softened and translucent, about 5-7 minutes.

Add the minced garlic, diced carrot, and diced potato. Cook for another 5 minutes, stirring occasionally.

Stir in the chopped tomatoes, baharat, cumin, and turmeric powder. Cook for 2-3 minutes until fragrant.

Add the rinsed red lentils, pierced dried black limes, and water or vegetable broth to the pot. Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes, or until the lentils and vegetables are tender. Stir occasionally to prevent sticking.

Remove the dried black limes before serving. Season the stew with salt and black pepper to taste.

Ladle the stew into bowls. Garnish with fresh chopped coriander and serve hot with lemon wedges on the side for squeezing.
