- 3 medium Tomatoes(chopped)

- 3-4 cups Beef broth
- 2-3 tsp Salt(to taste)
- 1-2 large Green plantains(peeled and cut into 1-inch chunks)
- 2 large Carrots(cut into chunks)
- 2 large Potatoes(cut into chunks)

Brown the beef cubes in a large frying pan with 1 tbsp of vegetable oil over medium-high heat. Do this in batches to avoid crowding the pan. Remove beef and set aside in a large pot or Dutch oven.

Add the remaining 1 tbsp of oil to the same pan. Add chopped onions and cook over low heat until softened and lightly browned, about 5-7 minutes. Add garlic, ginger, and jalapeรฑo (if using) and cook for another minute until fragrant.

Stir in the tomato paste and cook for 1 minute until it caramelizes slightly. Add the chopped tomatoes, curry powder, paprika, and black pepper. Cook for about 5 minutes, stirring occasionally, until tomatoes break down and form a thick sauce.
