  • 1 kg Lamb shoulder(cut into 2-inch pieces)
  • 3 tbsp Vegetable oil
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 400 g Tomatoes(crushed)
  • 2 tbsp Tomato paste
  • 150 g Peanut butter(smooth)
  • 300 g Okra(trimmed and sliced)
  • 1 optional Scotch bonnet pepper(finely chopped, seeds removed for less heat)
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 500 ml Vegetable or chicken broth
  • to taste Salt
  • to taste Black pepper
  • a handful Fresh cilantro(chopped, for garnish)
