  • 1.5 kg Pork belly(skin on, cut into a rectangular piece)
  • 4 cloves Garlic(minced)
  • 2 tsp Salt
  • 1 tsp Black pepper(freshly ground)
  • 1 tsp Cumin
  • 1 tsp Dried oregano
  • 0.5 tsp Red pepper flakes(optional)
  • 100 ml White wine(for deglazing (optional))
  • 1 roll Kitchen twine

    Score the skin of the pork belly in a diamond pattern, being careful not to cut into the meat. If the skin is not on, skip this step.

    In a small bowl, combine minced garlic, salt, pepper, cumin, oregano, and red pepper flakes (if using).

    Spread the spice mixture evenly over the meat side of the pork belly. Roll the pork belly tightly, starting from one of the longer sides, with the skin on the outside.

    Secure the rolled pork belly with kitchen twine at regular intervals to maintain its shape during cooking.

    Place the rolled pork in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until the pork is tender.
