- 1.5 cups Water
- 1 tsp Lemon zest
- 1 Cinnamon stick
- 2 cups Full-fat coconut milk
- 0.33 cup Granulated sugar(or to taste)
- 1 tsp Vanilla extract

- 1 tsp Ground cinnamon(for garnish)
- 2 tbsp Toasted coconut flakes(for garnish (optional))

In a saucepan, combine the rice, water, lemon zest, and cinnamon stick. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until the rice is tender and most of the water is absorbed.
