Ayam Pansuh
A traditional Iban dish from Borneo, Ayam Pansuh features chicken cooked in bamboo stalks with lemongrass, ginger, and other aromatics, imparting a unique smoky flavor and tender texture. While popular in Sarawak and Sabah, it's also enjoyed in Brunei.

- 1 kg Chicken(cut into medium pieces)
- 3 stalks Lemongrass stalks(bruised and cut into 3-inch lengths)
- 2 inch Ginger(sliced)
- 5 cloves Garlic(sliced)
- 3 medium Shallots(sliced)
- 1 tsp Turmeric powder
- 1 tsp Salt(or to taste)
- 0.5 cup Water
- 3 pieces Bamboo stalks(about 1.5-2 inches in diameter, cut into 1-foot lengths, sealed at one end with banana leaves or foil)
- 3 sheets Banana leaves(for sealing bamboo)

In a bowl, combine chicken pieces with lemongrass, ginger, garlic, shallots, turmeric powder, salt, and water. Marinate for at least 15 minutes.

Carefully stuff the marinated chicken and aromatics into the prepared bamboo stalks. Do not overfill.

Seal the open ends of the bamboo stalks tightly with banana leaves or aluminum foil to prevent steam from escaping.

Place the sealed bamboo stalks upright or at an angle in a pot or wok. Add enough water to come halfway up the bamboo stalks. Cover and cook over medium heat.

Cook until the chicken is tender and cooked through. The liquid inside the bamboo will form a flavorful broth.
