🧂 Ingredients

  • 500 g Shrimp(peeled and deveined)
  • 3 tbsp Olive oil
  • 1 large Onion(finely chopped)
  • 4 cloves Garlic(minced)
  • 1 inch Ginger(fresh, grated)
  • 400 g Tomatoes(diced)
  • 2 medium Carrots(sliced)
  • 1 medium Zucchini(diced)
  • 1 medium Bell pepper(any color, chopped)
  • 400 g Chickpeas(canned, rinsed and drained)
  • 2 tsp Baharat spice mix
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 Cinnamon stick
  • 1 Dried black lime (Loomi)(pierced with a knife)
  • 2 cups Vegetable broth
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Fresh cilantro(chopped, for garnish)
  • 1/4 cup Fresh parsley(chopped, for garnish)

    Heat olive oil in a tagine or a large pot over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

    Add the minced garlic and grated ginger, and cook for another minute until fragrant.

    Stir in the diced tomatoes, carrots, zucchini, bell pepper, and rinsed chickpeas. Cook for 5 minutes, stirring occasionally.

    Add the baharat spice mix, turmeric powder, and cumin powder. Stir well to coat the vegetables.

    Add the cinnamon stick and the pierced dried black lime. Pour in the vegetable broth. Season with salt and black pepper to taste.

    Bring the mixture to a simmer, then reduce the heat to low, cover the tagine or pot, and let it cook for 20-25 minutes, or until the vegetables are tender.

    Add the shrimp to the tagine. Stir gently to distribute them evenly. Cover and cook for another 5-7 minutes, or until the shrimp are pink and cooked through.

    Remove the cinnamon stick and dried black lime before serving. Garnish with fresh cilantro and parsley.
