Bajan Sweet Potato Fritters - Barbados traditional dish

🧂 Ingredients

  • 2 medium Sweet potatoes(peeled and grated)
  • 1 cup All-purpose flour
  • 0.25 cup Sugar
  • 1 tsp Baking powder
  • 0.5 tsp Ground cinnamon
  • 0.25 tsp Ground nutmeg
  • 0.25 tsp Salt
  • 0.25 cup Milk(or as needed for batter consistency)
  • for frying Vegetable oil

👨‍🍳 Instructions

  1. 1

In a bowl, combine the grated sweet potato, flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  2. 2

Add milk gradually, mixing until a thick batter forms. The batter should hold its shape when spooned.

  3. 3

Heat about 2 inches of vegetable oil in a skillet or pot over medium-high heat to 350°F (175°C).

  4. 4

Carefully drop spoonfuls of the batter into the hot oil. Fry in batches, ensuring not to overcrowd the pan.

  5. 5

Fry for about 2-3 minutes per side, or until golden brown and cooked through.

  6. 6

Remove fritters with a slotted spoon and drain on paper towels. Serve warm, optionally dusted with powdered sugar.

💡 Pro Tips

  • Squeeze out excess moisture from the grated sweet potato before mixing the batter for crispier fritters.
  • Do not make the batter too thin, or the fritters will absorb too much oil.
  • Fry at the correct temperature to ensure they cook through without burning.

🔄 Variations

  • Add a pinch of ground ginger for an extra warm spice note.
  • Serve with a drizzle of honey or maple syrup.
