Bife de Cerdo Koygua - Paraguay traditional dish

🧂 Ingredients

  • 600 g Pork Loin or Sirloin(cut into thin steaks (bifes))
  • 2 medium Onions(thinly sliced)
  • 2 cloves Garlic(minced)
  • 2 large Potatoes(sliced into rounds)
  • 2 medium Tomatoes(sliced into rounds)
  • 4 large Eggs
  • 1.5 cups Beef or Vegetable Broth(or as needed)
  • 3 tbsp Olive Oil
  • 1 tsp Oregano
  • 1 Bay Leaf
  • to taste Salt
  • to taste Black Pepper
  • for garnish Fresh Parsley(chopped)

👨‍🍳 Instructions

  1. 1

If the pork steaks are thick, pound them lightly between plastic wrap to an even thickness. Season generously with salt and pepper.

  2. 2

Heat olive oil in a deep skillet or Dutch oven over medium-high heat. Add the sliced onions and minced garlic, and sauté until softened and fragrant, about 5 minutes.

  3. 3

Add the pork steaks to the skillet and sear them on both sides until golden brown. Remove the pork from the skillet and set aside.

  4. 4

In the same skillet, add the sliced potatoes and tomatoes. Season with salt, pepper, and oregano. Add the bay leaf.

  5. 5

Return the pork steaks to the skillet, nestling them among the vegetables. Pour in the broth, ensuring it comes about halfway up the sides of the pork.

  6. 6

Bring the liquid to a simmer, then reduce the heat to low, cover the skillet, and cook for about 20-25 minutes, or until the potatoes are tender and the pork is cooked through. Add more broth if the liquid evaporates too quickly.

  7. 7

Once the pork and potatoes are tender, create four small wells in the mixture. Crack an egg into each well. Cover the skillet and cook for another 3-5 minutes, or until the egg whites are set and the yolks are cooked to your liking.

  8. 8

Garnish with fresh chopped parsley and serve immediately.

💡 Pro Tips

  • Using a good quality pork cut like loin or sirloin will ensure tenderness.
  • Don't overcrowd the pan when searing the pork; cook in batches if necessary.
  • Adjust the amount of broth to achieve your desired sauce consistency.

🔄 Variations

  • Add sliced bell peppers along with the onions for extra color and flavor.
  • A splash of white wine can be added with the broth for added complexity.
  • Serve with a side of rice or boiled yuca.
