🧂 Ingredients

  • 1086 g Breadfruit (Bambukeyo)(cored, skin removed, and cut into bite-sized pieces)
  • 543 g Sugar
  • 2.5 cups Water
  • 1/2 cup Jasmine water((optional, for fragrance))
  • 2 sticks Cinnamon sticks

    In a deep saucepan, combine the breadfruit pieces and water. Cook over medium heat until the breadfruit is medium-soft and the water has reduced by half.

    Add the sugar and cinnamon sticks to the pot. Stir well to combine. Cover and cook on low heat until some breadfruit pieces become soft and mushy, and the mixture starts to caramelize to a light brown color.

    If using jasmine water, add it now and continue to cook, stirring occasionally, until the mixture reaches a deep amber color. Be careful not to burn the sugar.

    Remove the cinnamon sticks before serving. Serve hot, optionally with coconut milk or whipped cream.
