Bosanska Krompiruša sa Mesom - Bosnia and Herzegovina traditional dish

🧂 Ingredients

  • 400 g All-purpose flour
  • 200 ml Water(lukewarm)
  • 1.5 tsp Salt
  • 50 ml Vegetable oil(for dough and greasing)
  • 300 g Ground beef
  • 1 medium Onion(finely chopped)
  • 2 cloves Garlic(minced)
  • 1 tsp Black pepper(ground)
  • 1 tsp Paprika
  • 800 g Potatoes(peeled and thinly sliced)
  • 1 large Egg(for brushing)

👨‍🍳 Instructions

  1. 1

In a large bowl, combine flour and 1 tsp salt. Gradually add lukewarm water and 25ml of vegetable oil, mixing until a soft dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for 30 minutes.

  2. 2

While the dough rests, prepare the meat filling. In a skillet, heat 25ml of vegetable oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.

  3. 3

Add ground beef to the skillet. Break it up with a spoon and cook until browned. Drain any excess fat.

  4. 4

Stir in the remaining 0.5 tsp salt, black pepper, and paprika. Cook for another 2 minutes. Remove from heat and let cool slightly.

  5. 5

Preheat your oven to 200°C (400°F). Grease a baking dish (approx. 9x13 inches) with vegetable oil.

  6. 6

Divide the dough into two portions, one slightly larger than the other. Roll out the larger portion thinly to fit the bottom and sides of the greased baking dish.

  7. 7

Layer half of the thinly sliced potatoes over the dough base. Season with a pinch of salt and pepper.

  8. 8

Spread the meat filling evenly over the potato layer.

  9. 9

Layer the remaining sliced potatoes over the meat. Season again with salt and pepper.

  10. 10

Roll out the second portion of dough thinly and place it over the top layer of potatoes. Tuck in the edges and crimp to seal.

  11. 11

Whisk the egg and brush it over the top of the krompiruša. You can score the top with a knife.

  12. 12

Bake for 45-50 minutes, or until the crust is golden brown and the potatoes are tender.

  13. 13

Let it rest for 10-15 minutes before slicing and serving.

💡 Pro Tips

  • Slice the potatoes very thinly for even cooking.
  • Ensure the meat filling is not too wet to avoid a soggy bottom crust.
  • You can add a tablespoon of sour cream to the meat mixture for extra moisture and flavor.

🔄 Variations

  • Make a vegetarian version by omitting the meat and adding more cheese or sautéed mushrooms.
  • Add a layer of finely chopped leeks or onions between the potato layers.
