Bosanski Kifli sa Višnjama (Bosnian Cherry Rolls) - Bosnia and Herzegovina traditional dish

🧂 Ingredients

  • 500 g All-purpose flour(plus more for dusting)
  • 250 ml Warm milk
  • 7 g Active dry yeast
  • 75 g Granulated sugar(divided)
  • 2 large Eggs
  • 50 g Butter(melted)
  • 1 tsp Salt
  • 300 g Sour cherries(pitted and drained (fresh or frozen))
  • 100 g Walnuts(chopped)
  • 1 tsp Lemon zest
  • 1 for wash Egg yolk
  • 1 tbsp Milk(for wash)

👨‍🍳 Instructions

  1. 1

Activate the yeast: In a small bowl, combine warm milk, 1 teaspoon of sugar, and the yeast. Let it sit for 5-10 minutes until foamy.

  2. 2

In a large bowl, whisk together the flour, remaining sugar, eggs, melted butter, salt, and the activated yeast mixture. Mix until a soft, slightly sticky dough forms.

  3. 3

Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

  4. 4

While the dough rises, prepare the filling: In a bowl, combine the pitted cherries, chopped walnuts, lemon zest, and 1 tablespoon of sugar. Mix well.

  5. 5

Punch down the risen dough and roll it out into a large rectangle (about 30x40 cm) on a lightly floured surface.

  6. 6

Spread the cherry and walnut filling evenly over the dough, leaving a small border around the edges.

  7. 7

Roll up the dough tightly from the long side to form a log. Cut the log into 12 equal slices.

  8. 8

Place the slices, cut-side up, into a greased baking dish or individual muffin tins. Cover and let them rise for another 20-30 minutes.

  9. 9

Preheat oven to 180°C (350°F). Whisk together the egg yolk and milk for the wash. Brush the tops of the rolls with the egg wash.

  10. 10

Bake for 20-25 minutes, or until golden brown and cooked through.

💡 Pro Tips

  • Ensure your milk is warm, not hot, to avoid killing the yeast.
  • If using frozen cherries, thaw them completely and drain excess liquid to prevent a soggy filling.
  • For a richer flavor, you can add a pinch of cinnamon to the cherry filling.

🔄 Variations

  • Use other fruits like plums or apricots.
  • Add a tablespoon of rum or cherry liqueur to the filling for an adult twist.
