  • 1 kg Chicken(cut into pieces, bone-in or boneless)
  • 500 g Okra(trimmed and sliced)
  • 2 large Onions(chopped)
  • 400 g Tomatoes(canned diced or fresh chopped)
  • 4 cloves Garlic(minced)
  • 1 tablespoon Ginger(grated)
  • 3 tablespoons Vegetable oil
  • 500 ml Chicken broth
  • 2 teaspoons Curry powder
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Salt(or to taste)
  • 0.5 teaspoon Black pepper(freshly ground)
  • 0.25 cup Fresh cilantro(chopped, for garnish)

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

    Add chopped onions to the pot and sauté until softened and translucent, about 5-7 minutes.
