🧂 Ingredients

  • 1.5 kg Goat meat(cut into large pieces)
  • 1 kg Sweet potatoes(peeled and cut into large chunks)
  • 2 large Onions(chopped)
  • 6 cloves Garlic(minced)
  • 4 tbsp Olive oil
  • 200 ml White wine
  • 2 leaves Bay leaves
  • 1 tbsp Thyme(fresh, chopped)
  • 1 tbsp Rosemary(fresh, chopped)
  • to taste Salt
  • to taste Black pepper
  • 250 ml Water or broth

    Preheat oven to 180°C (350°F).

    In a large bowl, combine the goat meat with chopped onions, minced garlic, olive oil, white wine, bay leaves, thyme, rosemary, salt, and pepper. Marinate for at least 30 minutes, or preferably longer in the refrigerator.

    Arrange the marinated goat meat and sweet potato chunks in a large roasting pan. Pour any remaining marinade over the meat and vegetables.

    Add the water or broth to the bottom of the roasting pan. Cover the pan tightly with foil.

    Roast in the preheated oven for 2 hours, or until the goat meat is tender. Remove the foil for the last 30 minutes of cooking to allow the meat and sweet potatoes to brown.

    Baste the meat and vegetables occasionally with the pan juices during cooking. Check for tenderness and adjust cooking time if necessary.
