Cabrito Assado com Batata Doce e Ginguba
A hearty roasted goat dish, marinated and slow-cooked with sweet potatoes and a rich peanut sauce (ginguba), offering a blend of savory, sweet, and nutty flavors.

- 1.5 kg Goat meat(cut into large pieces)
- 1 kg Sweet potatoes(peeled and cut into chunks)
- 2 large Onions(chopped)
- 6 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 200 g Ground peanuts (Ginguba)
- 2 tbsp Tomato paste
- 4 tbsp Vegetable oil
- 2 leaves Bay leaves
- 500 ml Water or broth
- 1.5 tsp Salt(or to taste)
- 1 tsp Black pepper(freshly ground)
- 1 small Optional: Piri-piri pepper(finely chopped, for heat)

In a large bowl, combine the goat meat with half of the minced garlic, grated ginger, half of the chopped onions, salt, pepper, and piri-piri (if using). Marinate for at least 1 hour, or preferably overnight in the refrigerator.

Preheat your oven to 160°C (320°F).

In a large oven-safe pot or Dutch oven, heat the vegetable oil over medium-high heat. Sear the marinated goat meat on all sides until browned.
