  • 3 medium Tomatoes(chopped)

  • 1 Bay leaf
  • 3 tbsp Vegetable oil
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh cilantro(chopped)

👨‍🍳 Instructions

  1. 1

In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the goat meat on all sides. Remove meat and set aside.

  2. 2

Add chopped onions to the pot and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger, cook for another minute until fragrant.

  3. 3

Stir in the chopped tomatoes, bell pepper, cumin, coriander, and turmeric. Cook for 5 minutes, stirring occasionally.

  4. 4

Return the goat meat to the pot. Add the diced carrots, potatoes, broth, and bay leaf. Season with salt and pepper.

  5. 5

Bring the stew to a boil, then reduce heat to low, cover, and simmer for at least 1 hour 15 minutes, or until the goat meat is tender.

  6. 6

Remove the bay leaf. Adjust seasoning if necessary. Garnish with fresh cilantro before serving.

💡 Pro Tips

  • Goat meat can be tough; simmering for a longer period ensures tenderness.
  • For a richer flavor, you can marinate the goat meat overnight with some of the spices.
  • If you don't have goat meat, lamb or beef can be used as substitutes.

🔄 Variations

  • Add a can of drained and rinsed chickpeas for extra protein and texture.
  • Include other root vegetables like sweet potatoes or butternut squash.
