🧂 Ingredients

  • 1.5 kg White fish fillets (e.g., cod, sea bass, snapper)(skinned, deboned, and cut into 2-inch chunks)
  • 3 tablespoons Olive oil
  • 2 medium Onions(chopped)
  • 4 cloves Garlic cloves(minced)
  • 2 medium Tomatoes(chopped)
  • 1 Green bell pepper(seeded and chopped)
  • 1 Red bell pepper(seeded and chopped)
  • 4 large Potatoes(peeled and cubed)
  • 2 large Sweet potatoes(peeled and cubed)
  • 1 bunch Fresh parsley(chopped)
  • 2 Bay leaves
  • 6 cups Water or Fish Stock
  • to taste Salt
  • to taste Black pepper

👨‍🍳 Instructions

  1. 1

Season the fish chunks with salt and pepper.

💡 Tip: Using a firm white fish will hold its shape better in the stew.
  2. 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and sauté until softened, about 5 minutes.

  3. 3

Add the minced garlic, chopped tomatoes, green and red bell peppers, and bay leaves. Sauté for another 5 minutes.

  4. 4

Add the cubed potatoes and sweet potatoes to the pot. Pour in the water or fish stock.

💡 Tip: Using fish stock will add more depth of flavor.
  5. 5

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

  6. 6

Gently add the seasoned fish chunks to the simmering stew. Stir in most of the chopped parsley.

💡 Tip: Avoid stirring too vigorously after adding the fish to prevent it from breaking apart.
  7. 7

Cover and cook for another 10-15 minutes, or until the fish is cooked through and flakes easily.

  8. 8

Taste and adjust seasoning with salt and pepper if needed. Garnish with the remaining fresh parsley before serving.

💡 Tip: Serve hot, with crusty bread for dipping.

💡 Pro Tips

  • You can add other root vegetables like yams or cassava if available.
  • For a richer broth, you can add a splash of white wine.
  • Some variations include adding a bit of tomato paste for color and flavor.

🔄 Variations

  • Add chorizo slices for an extra layer of flavor.
  • Include other seafood like shrimp or mussels.
  • For a spicier version, add a pinch of red pepper flakes.
