- 1 Red bell pepper(seeded and chopped)

- 2 large Sweet potatoes(peeled and cubed)
- 1 bunch Fresh parsley(chopped)
- 2 Bay leaves
- 6 cups Water or Fish Stock
- to taste Salt
- to taste Black pepper
👨🍳 Instructions
- 1
Season the fish chunks with salt and pepper.
💡 Tip: Using a firm white fish will hold its shape better in the stew. - 2
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and sauté until softened, about 5 minutes.
- 3
Add the minced garlic, chopped tomatoes, green and red bell peppers, and bay leaves. Sauté for another 5 minutes.
- 4
Add the cubed potatoes and sweet potatoes to the pot. Pour in the water or fish stock.
💡 Tip: Using fish stock will add more depth of flavor. - 5
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- 6
Gently add the seasoned fish chunks to the simmering stew. Stir in most of the chopped parsley.
💡 Tip: Avoid stirring too vigorously after adding the fish to prevent it from breaking apart. - 7
Cover and cook for another 10-15 minutes, or until the fish is cooked through and flakes easily.
- 8
Taste and adjust seasoning with salt and pepper if needed. Garnish with the remaining fresh parsley before serving.
💡 Tip: Serve hot, with crusty bread for dipping.
