  • 500 g Mussels(cleaned and debearded)
  • 2 tbsp Vegetable oil
  • 1 medium Yellow onion(chopped)
  • 4 cloves Garlic cloves(minced)
  • 400 g Tomatoes(diced)
  • 1 medium Red bell pepper(diced)
  • 1 stalk Celery stalk(diced)
  • 1.5 liters Fish broth or water
  • 2 tbsp Tomato paste
  • 0.5 cup Cilantro(chopped, plus more for garnish)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 1 pinch Optional: Pinch of cayenne pepper

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
