👨‍🍳 Instructions

  2. 2

In the same pot, reduce heat to medium and sauté the chopped onion until softened, about 5-7 minutes.

  3. 3

Add minced garlic and chopped tomatoes. Cook for another 5 minutes until tomatoes start to break down.

    ⏱️ 5 minutes
  4. 4

Return the browned beef to the pot. Pour in the beef broth or water, add the bay leaf, and bring to a simmer.

  5. 5

Cover the pot, reduce heat to low, and simmer for 1 hour, or until the beef is tender.

    ⏱️ 1 hour
  6. 6

Stir in the peanut butter until well combined. Add the sliced carrots, cubed potatoes, and green beans.

  7. 7

Continue to simmer, covered, for another 20-25 minutes, or until the vegetables are tender and the sauce has thickened.

    ⏱️ 25 minutes
💡 Tip: Stir occasionally to prevent sticking.
  8. 8

Taste and adjust seasoning with salt and pepper if needed. Remove the bay leaf before serving. Serve hot, often with funge or rice.

💡 Pro Tips

  • Use natural, unsweetened peanut butter for the best authentic flavor.
  • If the sauce is too thick, add a little more broth or water.
  • For a deeper flavor, you can marinate the beef in some spices overnight.

🔄 Variations

  • Add other vegetables like bell peppers, zucchini, or sweet potatoes.
  • For a spicier kick, add a pinch of cayenne pepper or a chopped chili.
  • Substitute lamb or chicken for beef.
