Chanfaina Hondureña
Chanfaina Hondureña is a rich and flavorful stew made from pork offal, typically including liver, heart, and kidneys, simmered with aromatic vegetables and spices. It's a hearty and traditional dish often served with rice, beans, and tortillas.

🧂 Ingredients
- 1 lb Pork liver(cleaned and cut into small cubes)
- 1/2 lb Pork heart(cleaned and cut into small cubes)
- 1/2 lb Pork kidney(cleaned and cut into small cubes)
- 1/2 cup Sour orange juice(or lime juice)
- 2 tsp Salt
- 1 large Onion(finely chopped)
- 1 large Green bell pepper(seeded and finely chopped)
- 2 medium Tomatoes(seeded and chopped)
- 4 cloves Garlic(minced)
- 3 tbsp Margarine or oil
- 1 tbsp Paprika
- 2 cubes Beef bouillon
- 1/2 bunch Cilantro(chopped)
- 1 tsp Oregano(dried)
- 1 cup Water or stock
👨🍳 Instructions
- 1
Rinse the pork offal (liver, heart, kidney) thoroughly. Marinate them in sour orange juice and salt for at least 30 minutes.
💡 Tip: The sour orange juice helps to tenderize the meat and remove any gamey flavors. - 2
Place the marinated offal in a pot, cover with water, and bring to a boil. Reduce heat and simmer for about 1 hour, or until tender. Drain and reserve about 1 cup of the cooking liquid. Cut the offal into small, bite-sized pieces.
- 3
In a large skillet or pot, heat the margarine or oil over medium heat. Add the chopped onion and bell pepper and sauté until softened, about 5-7 minutes.
- 4
Add the minced garlic and chopped tomatoes to the skillet. Cook for another 3-5 minutes until the tomatoes begin to break down.
- 5
Stir in the paprika, beef bouillon cubes (crumbled), chopped cilantro, and dried oregano. Cook for 1 minute until fragrant.
- 6
Add the cooked and cubed offal to the skillet. Pour in the reserved cooking liquid and the additional cup of water or stock. Stir well to combine.
💡 Tip: Ensure all ingredients are well combined. - 7
Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, allowing the flavors to meld and the stew to thicken.
- 8
Taste and adjust seasoning with salt and pepper if needed. Serve hot.
💡 Tip: Chanfaina is traditionally served with white rice, refried beans, and corn tortillas.
💡 Pro Tips
- ✓For a richer flavor, you can add other pork offal like snout or ears.
- ✓If you prefer a spicier dish, add a finely chopped jalapeño or a pinch of cayenne pepper.
- ✓The stew can be made ahead of time and reheated, as the flavors often deepen overnight.
🔄 Variations
- Some recipes include a splash of red wine for added depth of flavor.
- Achiote (annatto seed) can be added for a reddish-orange hue.
