Carne de Cerdo en Salsa de Tomate y Chile

- 1 kg Pork shoulder(cut into 1.5-inch cubes)
- 2 tbsp Vegetable oil
- 1 large Yellow onion(chopped)
- 5 cloves Garlic cloves(minced)
- 800 g Tomatoes(crushed or pureed)
- 2 cups Chicken broth
- 2 dried Dried ancho chilies(seeded and stemmed, soaked in hot water for 15 minutes)
- 2 dried Dried guajillo chilies(seeded and stemmed, soaked in hot water for 15 minutes)
- 1 tsp Cumin
- 1 tsp Oregano(dried)

- 0.25 cup Fresh cilantro(chopped, for garnish)

Pat the pork cubes dry with paper towels and season generously with salt and pepper.

Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the pork cubes in batches until browned on all sides. Remove pork and set aside.

Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

In a blender, combine the crushed tomatoes, chicken broth, soaked ancho and guajillo chilies, cumin, and oregano. Blend until smooth.

Pour the blended sauce into the pot with the onions and garlic. Bring to a simmer.

Return the seared pork to the pot. Cover, reduce heat to low, and simmer for at least 1 hour and 15 minutes, or until the pork is very tender.
