Dajaj bil Riz bil Sharieh (Syrian Chicken and Rice with Vermicelli)

- 500 g Chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 2 tbsp Olive oil or vegetable oil
- 1/2 cup Vermicelli noodles(broken into small pieces)
- 1.5 cups Basmati rice(rinsed well)
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 3 cups Chicken broth(low sodium)
- 1 tsp Allspice
- 1/2 tsp Cardamom(ground)
- 1/4 tsp Turmeric
- to taste Salt
- to taste Black pepper
- 2 tbsp Fresh parsley(chopped, for garnish)
- 2 tbsp Toasted slivered almonds(for garnish (optional))

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove chicken and set aside.

Add the chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Add the broken vermicelli noodles to the pot and toast, stirring constantly, until golden brown. Be careful not to burn them.
