Djibouti Fah-Fah
A hearty and flavorful soup or stew, traditionally made with goat meat, vegetables, and green chilies. It's often served with the Djiboutian flatbread, canjeero, making it a satisfying and comforting meal.

🧂 Ingredients
- 700 g Goat meat (or lamb/beef)(cut into 1-inch cubes)
- 2 tbsp Vegetable oil
- 2 large Onions(sliced)
- 4 cloves Garlic(minced)
- 2 medium Tomatoes(chopped)
- 2-3 Green chilies(deseeded and chopped (adjust to taste))
- 0.5 head Cabbage(finely shredded)
- 2 medium Potatoes(peeled and cubed)
- 6 cups Water or broth
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 0.5 tsp Turmeric
- to taste Salt
- to taste Black pepper

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the goat meat and brown it on all sides. Remove the meat and set aside.

Add the sliced onions to the pot and cook until softened and lightly browned, about 7-10 minutes.

Stir in the minced garlic, chopped tomatoes, and green chilies. Cook for 3-5 minutes until the tomatoes begin to break down.

Add the shredded cabbage and cubed potatoes to the pot. Stir to combine.

Return the browned meat to the pot. Add the water or broth, cumin, coriander, turmeric, salt, and pepper. Bring to a boil.

Reduce the heat to low, cover the pot, and simmer for at least 1 hour, or until the meat is tender and the vegetables are cooked through. Stir occasionally.

Taste and adjust seasoning as needed. If the stew is too thin, you can simmer it uncovered for the last 10-15 minutes to thicken.

Serve hot, traditionally with canjeero (Djiboutian flatbread).
