🧂 Ingredients

  • 700 g Goat meat (or lamb/beef)(cut into 1-inch cubes)
  • 2 tbsp Vegetable oil
  • 2 large Onions(sliced)
  • 4 cloves Garlic(minced)
  • 2 medium Tomatoes(chopped)
  • 2-3 Green chilies(deseeded and chopped (adjust to taste))
  • 0.5 head Cabbage(finely shredded)
  • 2 medium Potatoes(peeled and cubed)
  • 6 cups Water or broth
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Turmeric
  • to taste Salt
  • to taste Black pepper

👨‍🍳 Instructions

  1. 1

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the goat meat and brown it on all sides. Remove the meat and set aside.

  2. 2

Add the sliced onions to the pot and cook until softened and lightly browned, about 7-10 minutes.

  3. 3

Stir in the minced garlic, chopped tomatoes, and green chilies. Cook for 3-5 minutes until the tomatoes begin to break down.

  4. 4

Add the shredded cabbage and cubed potatoes to the pot. Stir to combine.

  5. 5

Return the browned meat to the pot. Add the water or broth, cumin, coriander, turmeric, salt, and pepper. Bring to a boil.

  6. 6

Reduce the heat to low, cover the pot, and simmer for at least 1 hour, or until the meat is tender and the vegetables are cooked through. Stir occasionally.

  7. 7

Taste and adjust seasoning as needed. If the stew is too thin, you can simmer it uncovered for the last 10-15 minutes to thicken.

  8. 8

Serve hot, traditionally with canjeero (Djiboutian flatbread).

💡 Pro Tips

  • If goat meat is unavailable, lamb or beef are good substitutes.
  • For a spicier dish, leave some of the seeds in the green chilies or add a pinch of chili flakes.
  • Ensure the meat is tender before serving for the best texture.

🔄 Variations

  • Add other root vegetables like carrots or sweet potatoes.
  • A small amount of tomato paste can be added for a richer tomato flavor.
  • Some recipes include a bay leaf for added aroma.
