  • 2 medium Onions(chopped)
  • 4 cloves Garlic cloves(minced)
  • 4 medium Tomatoes(diced)
  • 2 tbsp Tomato paste
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Cardamom
  • 0.25 tsp Cloves(ground)
  • 0.25 tsp Cayenne pepper(or to taste)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground)
  • 2 medium Potatoes(peeled and cubed)
  • 2 medium Carrots(peeled and sliced)
  • 4 cups Water or chicken broth
  • 0.25 cup Fresh cilantro(chopped, for garnish)

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes.
