Esquites (Mexican Corn Salad)

- 1/4 cup Mayonnaise(Full-fat mayonnaise provides the best creamy texture and flavor.)
- 2 tbsp Lime juice(Freshly squeezed lime juice is highly recommended for its bright, zesty flavor.)
- 100 g Cotija cheese(Crumbled. This salty, firm Mexican cheese is traditional. Feta can be used as a substitute if cotija is unavailable.)
- 2 tsp Chile powder(Such as ancho chile powder or a Mexican blend. Adjust to your spice preference. A pinch of cayenne can be added for extra heat.)

Melt the butter in a large skillet or pot over medium-high heat (approximately 190°C / 375°F). Once the butter is shimmering and lightly browned, add the corn kernels and the sprig of epazote.
