🧂 Ingredients

  • 400 g Dried White Beans(soaked overnight)
  • 1 large Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 800 g Tomatoes(crushed or pureed)
  • 500 ml Vegetable Broth or Water
  • 3 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Fresh Mint(chopped)
  • 2 tbsp Fresh Parsley(chopped)
  • 1 Bay Leaf

👨‍🍳 Instructions

  1. 1

Drain and rinse the soaked white beans. If using canned beans, rinse them thoroughly.

  2. 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

  3. 3

Add the minced garlic and cook for another minute until fragrant.

  4. 4

Stir in the crushed tomatoes, vegetable broth (or water), bay leaf, salt, and pepper. Bring to a simmer.

  5. 5

Add the drained white beans to the pot. If using dried beans, ensure they are fully submerged; add more liquid if necessary. If using canned beans, add them now.

  6. 6

Reduce heat to low, cover, and simmer for at least 45 minutes for canned beans, or 1.5-2 hours for dried beans, until the beans are tender and the sauce has thickened.

  7. 7

Stir in the chopped fresh mint and parsley just before serving.

🔄 Variations

  • Add smoked paprika for a smoky flavor.
  • Include diced carrots or celery along with the onion.
  • For a non-vegetarian version, add cooked sausage or lamb.
