- 800 g Tomatoes(crushed or pureed)
- 500 ml Vegetable Broth or Water

- 2 tbsp Fresh Mint(chopped)
- 2 tbsp Fresh Parsley(chopped)

Drain and rinse the soaked white beans. If using canned beans, rinse them thoroughly.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.
