Fijian Duruka Curry
A flavorful and aromatic curry featuring duruka (Fiji asparagus) in a rich coconut milk-based sauce with Fijian spices. Duruka is a unique vegetable with a texture similar to asparagus and a slightly nutty flavor.

🧂 Ingredients
- 500 g Duruka(trimmed and cut into 5cm pieces)
- 400 ml Coconut milk(full fat)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 0.5 tsp Chili flakes(or to taste)
- 2 tbsp Vegetable oil
- to taste Salt
- a handful Fresh coriander(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.

Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in turmeric powder, cumin powder, coriander powder, and chili flakes. Cook for 30 seconds, stirring constantly, until spices are fragrant.

Add the duruka pieces to the pot and stir to coat them with the spice mixture. Cook for 2-3 minutes.

Pour in the coconut milk and bring the mixture to a simmer. Reduce heat to low, cover, and cook for 20-25 minutes, or until the duruka is tender but still has a slight bite.

Season with salt to taste. Garnish with fresh coriander before serving.
