- 1.5 kg Chicken(cut into pieces, bone-in or boneless)
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 400 g Tomatoes(diced)
- 2 medium Bell peppers(mixed colors, chopped)
- 2 medium Carrots(peeled and sliced)
- 1 medium Zucchini(sliced)
- 1 medium Sweet potatoes(peeled and cubed)
- 500 ml Chicken broth
- 2 tbsp Tomato paste
- 3 tbsp Olive oil
- 1 bunch Coriander(chopped, for garnish)

- 2 Bay leaves

Season chicken pieces with salt and pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken pieces on all sides, then remove and set aside.
