  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 400 g Tomatoes(diced)
  • 2 medium Bell peppers(mixed colors, chopped)
  • 2 medium Carrots(peeled and sliced)
  • 1 medium Zucchini(sliced)
  • 1 medium Sweet potatoes(peeled and cubed)
  • 500 ml Chicken broth
  • 2 tbsp Tomato paste
  • 3 tbsp Olive oil
  • 1 bunch Coriander(chopped, for garnish)

  • 2 Bay leaves

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken pieces on all sides, then remove and set aside.
