  • 600 g Chicken thighs(boneless, skinless, cut into bite-sized pieces)
  • 0.5 cup Peanut butter(smooth or crunchy, unsweetened)
  • 1 medium Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 tsp Ginger(freshly grated)
  • 400 g Tomatoes(canned diced, undrained)
  • 1.5 cups Chicken broth
  • 1 medium Bell pepper(any color, chopped)
  • 2 medium Carrots(peeled and sliced)
  • 1 medium Zucchini(chopped)
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Cilantro or parsley(chopped, for garnish)

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.

    Add chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.

    Stir in the peanut butter until it begins to melt. Gradually whisk in the chicken broth and diced tomatoes, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
