Gestoofde Peren (Stewed Pears)
Gestoofde Peren are tender, spiced pears that are slowly simmered in red wine or fruit juice until they are soft and have absorbed the aromatic flavors of cinnamon, cloves, and sometimes star anise. They are a popular dessert or side dish, especially during the autumn and winter months, often served with vanilla ice cream or as an accompaniment to savory dishes like game or stoofvlees (stewed meat).

🧂 Ingredients
- 6 medium Stewing pears (e.g., Gieser Wildeman or Saint Rémy)
- 750 ml Red wine (or a mix of red wine and water, or berry juice)
- 50 g Brown caster sugar
- 2 Cinnamon sticks
- 2 Cloves
- 1 Star anise (optional)
- 1 tsp Lemon zest
👨🍳 Instructions
- 1
Peel the pears, leaving the stems intact. Wash them and place them upright in a pot where they fit snugly.
💡 Tip: You can also halve the pears and remove the core if preferred. - 2
Add the red wine (or your chosen liquid), brown caster sugar, cinnamon sticks, cloves, star anise (if using), and lemon zest to the pot.
💡 Tip: Ensure the liquid almost covers the pears. You can add a little water if needed. - 3
Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and simmer for 2.5 to 3 hours, or until the pears are tender and have a deep red color. Turn the pears halfway through cooking to ensure even coloring.
⏱️ 2.5 - 3 hours💡 Tip: The longer they stew, the softer and more flavorful they become. - 4
Once cooked, let the pears cool in their poaching liquid. This helps them absorb more flavor and firm up slightly.
💡 Tip: They can be served warm or cold. - 5
To serve, place the pears in a bowl with some of the poaching liquid. They can be enjoyed as a dessert with vanilla ice cream or whipped cream, or as a side dish with savory meals.
💡 Pro Tips
- ✓For a richer flavor, use a good quality red wine or port.
- ✓If you prefer not to use alcohol, berry juice (like blackcurrant or cherry) is a good substitute.
- ✓The pears can be made a day in advance and stored in the refrigerator in their liquid.
🔄 Variations
- Add a vanilla bean to the poaching liquid for a different aromatic note.
- A splash of grenadine can be added for extra color and sweetness.
- For a fresher taste, add a bit of lemon juice or zest.
