- 4 cloves Garlic cloves(minced)
- 3 medium Bell peppers(chopped)
- 5 medium Tomatoes(chopped)
- 1 bunch Fresh mint(chopped)
- 1 cup Sour orange juice
- 1 tbsp Achiote (annatto) powder(or paprika for color)
- 4 tbsp Lard or butter
- 1 tsp Salt(to taste)
- 0.5 tsp Black pepper(to taste)

In a large pot or Dutch oven, heat the lard or butter over medium-high heat. Add the chopped onion and minced garlic and sauté until softened and fragrant, about 5 minutes.
