  • 1 medium Onion(sliced)
  • 1 medium Bell pepper(any color, sliced)
  • 4 cloves Garlic(minced)
  • 2 stalks Scallions(chopped)
  • 2 sprigs Thyme
  • 1 whole Scotch bonnet pepper(optional, for heat)
  • 2 tbsp Tomato paste
  • 1 cup Water or fish broth
  • 2 tbsp Soy sauce
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(or to taste)

    Rinse fish pieces and pat dry. Season with salt and black pepper.

    Place all-purpose flour in a shallow dish. Dredge each fish piece in flour, shaking off excess.
