Jamaican Curried Chicken and Potato

- 1.5 kg Chicken thighs(bone-in, skin-on, cut into serving pieces)
- 750 g Potatoes(peeled and cut into 1.5-inch chunks)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 tablespoon Ginger(freshly grated)
- 1 small Scotch bonnet pepper(finely chopped, seeds removed for less heat)
- 3 tablespoons Curry powder(Jamaican curry powder blend)
- 1 teaspoon Allspice berries(crushed)
- 2 sprigs Thyme(fresh)
- 400 ml Coconut milk(full-fat)
- 2 tablespoons Vegetable oil
- 1 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper(freshly ground)
- 120 ml Water(or as needed)

Season the chicken pieces with salt and black pepper.
