🧂 Ingredients
- 1 kg Whole chicken(cut into pieces)
- 1 medium Onion(finely chopped)
- 4 cloves Garlic(minced)
- 1 tbsp Ginger(grated)
- 1 small Scotch bonnet pepper(finely chopped (optional, adjust to taste))
- 2 tbsp Vegetable oil
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 1 tsp Curry powder
- 0.5 tsp Thyme(dried)
- 2 tbsp Lemon juice
👨🍳 Instructions
- 1
In a bowl, combine the chopped onion, minced garlic, grated ginger, chopped scotch bonnet (if using), vegetable oil, salt, black pepper, curry powder, thyme, and lemon juice. Mix well to create a marinade.
💡 Tip: Ensure all spices are well combined for even flavor distribution. - 2
Add the chicken pieces to the marinade, ensuring each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or preferably for 1-2 hours for deeper flavor.
- 3
Preheat your grill or grill pan to medium-high heat. If using an oven, preheat to 200°C (400°F).
💡 Tip: Ensure the grill grates are clean and lightly oiled to prevent sticking. - 4
Remove chicken from the marinade, letting any excess drip off. Grill the chicken pieces for about 6-8 minutes per side, or until cooked through and nicely charred. If baking, place chicken on a baking sheet and bake for 25-30 minutes, flipping halfway through, until cooked through.
💡 Tip: Internal temperature should reach 74°C (165°F). - 5
Serve the Kati Kati hot, often accompanied by a side of fried plantains, rice, or a simple salad.
💡 Tip: Garnish with fresh parsley or cilantro if desired.
