Kenyan Beef and Vegetable Stew

- 1.5 lbs Beef chuck roast(cut into 1-inch cubes)
- 2 tbsp Vegetable oil
- 2 medium Onions(chopped)
- 4 cloves Garlic(minced)
- 1 inch Ginger(fresh, minced or grated)
- 3 medium Tomatoes(chopped)
- 1 tbsp Tomato paste
- 1 tsp Curry powder
- 1 tsp Paprika
- 0.5 tsp Hot paprika(optional, for heat)
- 4 cups Beef broth
- 2 large Potatoes(peeled and cubed)
- 2 medium Carrots(peeled and cut into chunks)
- 2 tsp Salt(to taste)
- 0.5 tsp Black pepper(freshly ground, to taste)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes in batches until nicely seared on all sides. Remove beef and set aside.

Add chopped onions to the pot and cook until softened and lightly browned, about 5-7 minutes. Add minced garlic and ginger and cook for another minute until fragrant.
