Kenyan Mishkaki - Kenya traditional dish

🧂 Ingredients

  • 500 g Beef sirloin or chicken breast(cut into 1-inch cubes)
  • 3 tbsp Lemon juice
  • 2 tbsp Vegetable oil
  • 3 cloves Garlic(minced)
  • 1 tsp Ginger(grated)
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Chili powder(or to taste)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 12 pieces Wooden skewers(soaked in water for 30 minutes)

👨‍🍳 Instructions

  1. 1

In a bowl, combine lemon juice, vegetable oil, minced garlic, grated ginger, cumin, coriander, turmeric, chili powder, salt, and black pepper. Mix well to create the marinade.

  2. 2

Add the cubed beef or chicken to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

  3. 3

Thread the marinated meat onto the soaked wooden skewers, leaving a small space between each piece.

  4. 4

Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking.

  5. 5

Grill the mishkaki for about 10-15 minutes, turning occasionally, until the meat is cooked through and nicely charred on all sides.

  6. 6

Serve hot, often with kachumbari (tomato and onion salad) or a side of ugali.

💡 Pro Tips

  • For extra tender meat, marinate for longer.
  • Ensure your grill is hot before placing the skewers to get a good sear.
  • Don't overcrowd the skewers; leave some space for even cooking.

🔄 Variations

  • Add chunks of bell peppers and onions to the skewers for a vegetable medley.
  • Use lamb or firm fish for a different protein.
