  • 1 kg Pork shoulder(cut into 1.5-inch cubes)
  • 2 cans (400ml each) Coconut milk(full fat)
  • 500 g Taro(peeled and cubed)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch Ginger(grated)
  • 2 tbsp Curry powder
  • 2 tbsp Vegetable oil
  • to taste Salt
  • to taste Black pepper
  • 1 cup Water or chicken broth

    Pat the pork cubes dry with paper towels and season generously with salt and pepper.

    Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the pork cubes in batches, ensuring not to overcrowd the pot. Remove browned pork and set aside.
