🧂 Ingredients

  • 1 kg Potatoes(peeled and cut into 2-3 cm cubes)
  • 2 large Leeks(white and light green parts only, washed and sliced)
  • 1 medium Onion(chopped)
  • 3 cloves Garlic(minced)
  • 3 tbsp Vegetable oil or lard
  • 2 tsp Sweet paprika
  • 1 tsp Smoked paprika
  • 750 ml Vegetable broth or water
  • 1 piece Bay leaf
  • to taste Salt
  • to taste Black pepper
  • 100 ml Sour cream(optional, for serving)
  • 2 tbsp Fresh parsley(chopped, for garnish)

    Heat the oil or lard in a large pot or Dutch oven over medium heat.

    Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.

    Add the sliced leeks and minced garlic. Cook for another 5-7 minutes until the leeks are softened.

    Stir in the sweet and smoked paprika. Cook for 1 minute, stirring constantly, until fragrant. Be careful not to burn the paprika.

    Add the cubed potatoes, vegetable broth (or water), and the bay leaf. Season with salt and black pepper.

    Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the potatoes are tender and the stew has thickened.
