- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 3 tbsp Vegetable oil or lard
- 2 tsp Sweet paprika
- 1 tsp Smoked paprika
- 750 ml Vegetable broth or water
- 1 piece Bay leaf
- to taste Salt
- to taste Black pepper
- 100 ml Sour cream(optional, for serving)
- 2 tbsp Fresh parsley(chopped, for garnish)
👨🍳 Instructions
- 1
Heat the oil or lard in a large pot or Dutch oven over medium heat.
- 2
Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- 3
Add the sliced leeks and minced garlic. Cook for another 5-7 minutes until the leeks are softened.
- 4
Stir in the sweet and smoked paprika. Cook for 1 minute, stirring constantly, until fragrant. Be careful not to burn the paprika.
- 5
Add the cubed potatoes, vegetable broth (or water), and the bay leaf. Season with salt and black pepper.
💡 Tip: Ensure potatoes are mostly submerged in the liquid. - 6
Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the potatoes are tender and the stew has thickened.
💡 Tip: Stir occasionally to prevent sticking. - 7
Remove the bay leaf. Taste and adjust seasoning with salt and pepper if needed.
💡 Tip: If the stew is too thin, you can mash a few potato cubes against the side of the pot to thicken it. - 8
Serve hot, garnished with fresh chopped parsley. Optionally, swirl in a tablespoon of sour cream into each serving bowl.
